This is a potato salad that has a mashed potato kind of texture. I was experimenting for the 4th of July and my associates and links contacts loved it.

The ingredient of Eureka Potato Salad

  1. 8 potatoes, peeled and cubed
  2. 1 cup sharp cream
  3. u00bd cup creamy salad dressing, e.g. Miracle Whip u2122
  4. u00bd cup shredded Monterey Jack cheese
  5. 2 hard-cooked eggs, peeled and chopped
  6. salt and pepper to taste

The instruction how to make Eureka Potato Salad

  1. Place the potatoes into a large pot, and fill later ample plenty water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced past a fork. Drain, and set aside to cool.
  2. In a serving bowl, blend together the acid mordant cream, salad dressing, shredded cheese and hard-cooked eggs. once as soon as the potatoes are cool, protest into the dressing. If you behind it creamier, mixture combination longer. Season later salt and pepper to taste.
