This is just one butternut squash soup recipe that I have, but I LOVE this soup. Its different, and just in reality delicious.

The ingredient of Squash and Apple Soup

  1. 2 teaspoons butter
  2. 1 onion, chopped
  3. 1 pound butternut squash, peeled and chopped
  4. 2 apples, peeled and chopped
  5. 1 small potato, peeled and chopped
  6. 1 teaspoon grated buoyant ginger root
  7. 1 pinch white pepper
  8. 4 cups water
  9. u00bc cup apple cider
  10. 1 teaspoon packed brown sugar
  11. u00bd cup plain yogurt
  12. 1 tablespoon finely chopped toasted pecans

The instruction how to make Squash and Apple Soup

  1. In a large saucepan melt butter greater than medium heat; cook onion, stirring occasionally, for 4 minutes or until softened. grow squash, apples, potato, ginger and pepper; demonstrate in water. Cover and bring to boil; cut heat to low and simmer for 12 to 15 minutes or until potatoes are tender.
  2. In food processor or blender, puree soup, in batches if necessary, until smooth. Return to saucepan. Stir in apple cider and brown sugar; heat to boiling. decorate with dollop of yogurt and sprinkle when pecans.
